Getting Started – Asparagus, Parma Ham and Pecorino with Basil Oil Dressing

This a really quick and flashy GF starter that I often make if I have a few people over for dinner. Asparagus, Parma Ham and Pecorino with Basil Oil Dressing.

Servers 4
2x packets of Asparagus
2x packets of Parma Ham
1 block of good of Pecorino
Salt and Pepper, Olive Oil

Basil Oil
1x 100g packet of Basil
6 tablespoons of Extra Virgin Olive Oil
1 tablespoon of Pine Nuts

Start by making the Basil Oil. Lightly toast the pine nuts in a pan. Place basil, oil and pine nuts in a pan and blend until jut combined. Add additional oil to make it a nice consistency if needed. Place to the side. Grill the asparagus in a hot pan with a little oil and add salt and pepper to taste. Place on a plate with 1-2 slices of parma ham and a few shaves of the cheese. Drizzle oil around the plate and serve.

This whole dish takes about 15 minutes to make and is such a crowd pleaser.
