Sexy Courgette, Lemon and Mushroom Pasta

Tonight I fancied whipping up something super tasty and a little bit sexy to juice up my thursday night. Dove’s Farm make a fantastic gluten-free macaroni, which is light and tasty and holds onto sauce very well.

Ingredients
Serves 2

1 Courgette
10 Brown Cap Mushrooms
1/2 a Red Onion
5 Spring Onions
100g of Pancetta or Ham
2 Cloves of Garlic
1 Bunch of Flat Leaf Parsley
1/2 Lemon
Olive Oil
Salt and Pepper
GF Pasta for two (about 100g per person)

Place a pan of water on to boil.

Slice red onion and pancetta and add to a hot pan with a dash of olive oil. Sautee until the pancetta and onion have taken on colour. Thinly slice the spring onion, courgette, mushroom and garlic. Add and other dash of olive oil and add remaining vegetables to the pan, turn down the heat and gentry cook until tender.

Put pasta into the pan, it takes about 10 minutes and add a good glug of olive oil to the pan. Stir constantly to ensure the pasta doesn’t stick. Once cooked drain of existing water.

Throw the pasta into the pan with the pancetta and vegetables. Toss lightly adding enough olive oil to give a light gloss. Squeeze half the lemon juice and fresh chopped parsley. Serve and enjoy!
