One of life’s great pleasures is a simple plate of steak frites. It is one of my favourite simple gluten-free meals. My favourite cut of steak is a rib eye. I like it because it has just the right amount of marbling to produce a tasty and yet tender offering. Conventional wisdom tells us that good steak is best done as rare, it is certainly what I would recommend. In order to sex it up a little, try adding a chimichurri seasoning. Serve with gluten free oven fries and a side salad of rocket drizzled with olive oil and lemon juice.

50g  flat-leaf parsley chopped
1/2 red onion, finely chopped
4 garlic cloves, finely chopped
1-2 thyme sprigs, finely chopped
Juice of 1 lemon, plus the finely grated zest
250ml olive oil

Chop all and mix marinate steak  over night and cook as normal.
