Vegetarian Gluten Free Pasta

I make this pasta dish fairly often as its quick and easy and looks as good as it tastes. Adjust any or all of the vegetables, the key is to get an interesting mix.

1 Aubergine
1 Courgette
1 Red Onion
6-10 Mushrooms (as exciting a mix as you can find)
1 tub of Cherry Tomatoes
1 glass of Shiraz
3 cloves of Garlic
1 bunch of fresh Basil
1 tin of chopped Tomatoes
2 tablespoons of Extra Virgin Olive Oil

Begin by slicing the onion and garlic and gently saute in olive oil until slightly translucent. Chop all the vegetables into even sized pieces and add to the pan. Throw in the red wine and tomatoes. Season as desired. Cook for about 30 minutes until all is reduced. Whilst the sauce is cooking pop on some pasta, I quite like pastas which are a mix of corn and rice. When pasta is cooked, stir through the fresh basil and use any leftover to garnish.

And enjoy with a nice glass of Cabernet Sauvignon.
