Peanut Butter and Chocolate Chip Cookies…. oh so easy, but be warned, they are completely addictive!

1 cup chunky peanut butter
1 cup sugar
1 cup rice flour
3 eggs (beaten)
1 block of chocolate (in chunks) I used Lindt milk chocolate
1 tablespoon of baking powder gf

Preheat oven to 200 degrees. Line two trays with baking paper. Whisk eggs and beat lightly, then beat in sugar until combined (about a minute). Add in rice flour, peanut butter and baking power. Mixture should be stiff and the spoon difficult to move.

Put small spoonfuls of the mixture on the trays. Make sure you leave space between each one as the mixture spreads. Cook for 12-15 minutes until golden. Allow to cool before removing from trays.
